Homemade Ginger Chews
Maybe you're one of the lucky mamas who hasn't had to suffer through morning sickness. I hope so! I, however, was not.....I endured 9 long months of all day sickness. Ginger does wonders for nausea and has been used for thousands of years in treating tummy issues. We wanted to share with you one of our favorite ways to enjoy the wonderful benefits of ginger.
Healthy and Delicious Ginger Chews
Ingredients:
2 c. pure water
1/4 c. shredded ginger root (Packed)
3/4 c. organic cane sugar (brown sugar works great as well)
1/4 c. pure honey
candy thermometer
Instructions:
Grate fresh ginger and pack down to measure ¼ cup. Add ginger to 2 cups of water in a sauce pan. Simmer until half of the liquid has evaporated (Typically, about thirty minutes) Strain. Reserve 1 cup of ginger decoction
Grease a small glass dish with coconut oil. Cut parchment paper to fit the bottom of pan. Grease the parchment paper with coconut oil.
Pour ginger decoction in a large saucepan. Add sugar and honey. Turn pan on high heat until it reaches 260 degrees.
When temperature is reached, pour candy into the glass pan and let sit for 30 minutes.
Turn dish over and remove parchment paper from the bottom of the candy. Run a sharp knife under HOT water and cut the candy into small pieces of your preference. Wrap individual pieces in parchment paper for storage.
Candies are shelf stable for 4-5 weeks and last longer if stored in the refrigerator.
