Stem Ginger and Apricot Cookies
If you're suffering from morning sickness, a cookie or biscuit may help settle the stomach. These contain stem ginger, which is known for its anti-nausea properties.
6 1/2 tablespoons unsalted butter or polyunsaturated margarine.
6 tablespoons light brown sugar
2/3 cup self-rising flour
3 tablespoons whole-wheat self-rising flour
2/3 cup old-fashioned rolled oats
2oz. stem ginger, roughly chopped
2 1/2 oz. ready-to-eat unsulfured dried apricots, roughly chopped

Preheat oven to 350 degrees
Cream the butter and sugar together in a bowl using a wooden spoon or hand-held mixer until light and fluffy. Sift in both types of flour, then gently stir in with the oats, stem ginger and dried apricots to make a softish dough.
Put tablespoons of the cookie mixture onto the lined baking sheets, making sure they are ell spaed out to allow room for them to spread. Slightly flaten the top of each cookie, then bake for 15-20 minutes until light golden but still slightly soft.
Let cool for 5 minutes, then transfer to a wire rack to cool completely.
